A Foodie Must in South-Central PA: A Culinary Adventure at Bistro 71’s Pre-Fixe Chef’s Dinner

If you’re a foodie or simply someone who appreciates the finer things, Bistro 71’s monthly Pre-Fixe Chef’s Dinner is an experience you won’t want to miss. Each month, Chef Jacob Vorhees curates a five-course menu that’s equal parts artistry and indulgence, offering thoughtfully paired wines for each dish.

My friends and I, however, decided to walk on the spirited side — skipping the wine pairings in favor of trying every one of their seasonal cocktails. Let me tell you… not one of them missed.

🍏 Drink One: Caramel Apple Mule

We kicked things off with the Caramel Apple Mule, a crisp and cozy concoction of fresh-squeezed lime, spicy ginger beer, and a ribbon of caramel drizzle that looked like it belonged in a latte art competition. Sweet, spicy, and absolutely picture-perfect — the kind of cocktail that makes you reach for your camera before your straw.

🦞 First Course: Sous Vide Lobster Tail

Chef Jacob set the tone early with a luxurious Sous Vide Lobster Tail over Leek Confit, finished in a lobster jus. Buttery, delicate, and deeply flavorful, this dish alone was worth the reservation.

🍂 Drink Two: Harvest Martini

Next up, the Harvest Martini — an elegant blend of Hennessy and ginger liqueur, with subtle notes of apple that captured the very essence of fall. Smooth, balanced, and perfectly sippable, this one was autumn sophistication in a glass.

🦘 Second Course: Kangaroo Bolognese

Then came something bold — Kangaroo Bolognese over house-made pappardelle. Earthy and rich, the flavors were both familiar and exotic. Since I’m gluten-free, I mentioned it at the time of reservation, and Chef Vorhees graciously prepared a special gluten-free linguini version for me and a few others.

It’s worth noting that while the chef does his best to accommodate restrictions, communication when booking is essential — especially with such adventurous ingredients.

🍁 Drink Three: Spiced Orchard

The Spiced Orchard cocktail felt like fall had dressed up for a night out — bourbon, apple cider, maple syrup, and bitters, served in a chic coupe glass. Perfectly balanced, cozy, and a little fancy — she was a phabulous fall queen in cocktail form.

🐚 Third Course: Pan-Seared Scallops

Course three featured Pan-Seared Scallops resting on a soy demi-glace and topped with caviar. It was rich yet restrained, an elegant mix of umami and luxury.
 

 

🍹 Drink Four: Cranberry Sage Margarita

Next came what I’d call the most crushable cocktail of the night — the Cranberry Sage Margarita. Muddled sage, fresh cranberries, and tequila… need I say more? It was bright, herbal, and dangerously easy to drink. Let’s just say you’ll finish it before you realize you’ve done so — and immediately want another.

🥢 Fourth Course: Sticky Asian-Style Short Ribs

The Sticky Asian-Style Short Ribs stole the show — fall-apart tender, glazed in a sticky-sweet sauce, and served with infused white rice and scallions. Every bite melted in your mouth.

☕ Drink Five: Espresso Martini

For dessert, we paired our sweets with the Espresso Martini — Bistro 71 chills their espresso in-house for this one, giving it a smooth, velvety texture. Rich, dark, and just the right amount of bold, it was the perfect match for dessert and a must-try for espresso lovers.

🍰 Fifth Course: Baked Peanut Butter Cake

Dessert was indulgence perfected — Baked Peanut Butter Cake with graham cracker crumble and house-made marshmallow ice cream. Warm, creamy, and nostalgic with a gourmet twist, it was the sweetest ending imaginable.

🥃 Final Drink: Sweet Lemon Old Fashioned

To cap off the night, we couldn’t resist one last cocktail — the Sweet Lemon Old-Fashioned. A creative spin on a classic, this drink featured house-made lemon marmalade, giving the traditional old-fashioned a bright, citrus-forward twist that was both comforting and modern.

From exotic proteins to perfectly plated desserts and cocktails that deserve their own fan club, Bistro 71’s Chef’s Dinner is more than a meal — it’s a monthly ritual worth dressing up for. Every detail, from the service to the plating, feels intentional and elevated.

Whether you’re a Chambersburg local or just a foodie in the Tri-State willing to travel for a high-end, unique dining experience, make this event a priority on your culinary calendar. Just don’t forget to book early, and don't be shy to skip the wine pairings in favor of their delicious assortment of seasonal cocktails; you’ll still be dreaming about them weeks later.
